Fizz, I have not used that particular brand PID but have worked with many other brands. They in general are effective, Proper sensor placement and programming they work very well.

In smoking there are many variables and temp control is just one. Air circulation, smoke circulation and a lot of others come in to play.

Take it a step at a time, and ask lots of questions here, there's just tons of experience to tap.

I have used a BBQ Guru very successfully with my old electric smoker.  In addition to maintaining temps, it has a ramp feature.  I no longer have the smoker though, so am selling the PID.
