New to smoking of any kind!

A friend on another forum gave me a Masterbuilt electric hot smoker, and I readily accepted since I do a lot of steelhead and salmon fishing.  I understand the processes involved, but would rather learn from others' successes and/or failures than go through the whole process myself.


So, using Alton Brown's recipe (salt, brown sugar, white sugar, pepper), and having the filets all ready, I'm ready to begin.


I've read anything from long, low temps to shorter high temps, but I'm still feeling my way through a bit.  Put chips in early, put them in after the meat has cooked a bit, no water, yes water............ugh!


Any suggestions for moist smoked salmon filets?  I've got apple, almond, cherry, pecan, all sorts of chips that came with the smoker.

Thanks for the warm welcome, and quick response to my initial post.


Just for background:


I'm 62, recently retired from federal service after 38 years.  Wild horse wrangler, surveyor, invasive weed specialist, range specialist, timber faller, firefighter, dozer operator.


Hobbies include mt. climbing, competitive cycling, salmon and steelhead fishing, bagpipes.


Married for 33, no wait, 34 years.  One son, 28 years old.


We live happily in Southern Oregon.


That about sums it up.  A friend gave me a Masterbuilt smoker last year, as he wasn't using it any longer.  It's an electric model w/4 racks.  Looking forward to bringing more salmon and steelhead home to smoke, as well as vegetables, other meats, etc.


Looking forward to rubbing elbows around here, and learning as much as I can.  Will use the search faculty as much as I can to avoid asking the same questions that others have asked for years.

Hey Bob, hello and welcome to SMF. I don't have an electric (I'm a stick burner) but lots of members use electric and can help. Bearcarver does all kinds of smoking on his electric and can probably give you a few pointers, he also has a step by step that is super helpful.
