Very first smoke in my MES 30" <Gen2>

Hey all.  After seasoning my brand new smoker yesterday, it was time to put it to work today.  We picked up a big pack of pork ribs at CostCo yesterday & gave them a good dry rub this morning.


Just before noon, I fired up the smoker & brought it up to temp.  I set it at 235F, since I noticed my MES

reported a bit low compared to a more reliable digital thermometer.  I used a mix of hickory & cherry wood chips.


After the 1st hour (3-2-1 technique), I cracked the box open to do a quick apple juice schpritz.


TBS (hopefully)


We had an unexpected cloud burst in the middle of the day, so I put a plastic plate over the control panel in an attempt keep the electronics dry.


Here's the final product.  I was VERY impressed at the quality of the ribs.  Great smoke flavor, but not overpowering.  They were tender, but still had good bite.


 Thanks to all the great posts on this site, I was very successful on my first run.  Can't wait to do another!

Very nice! My first smoke was wings! (they were spectacular!) The next 2 smokes were ribs! And these electric smokers "Can-Do" ribs!!! Wonderful Pics

3-2-1

3 hours unwrapped in the smoker.

2 hours wrapped in foil with a little of your favorite juice mixture in the package.

1 hour unwrapped to firm up.

This is just a starter plan & adjusted to your tastes after trying this.
