how do i avoid the temp spiking when i take the lid off, or open the door? the second i open the lid the temp spikes to 275 immediately from 225

Do you have any water in the pan, or are you running with a dry pan mod of some sort? Water will reduce the speed and peak temp of spikes due to evaporation and the mass of the water. Temps will always rise some with a solid fuel fire when you open up a vertical smoker, but I've never had them get that far off of target temp.
