Good morning all, love smoking ribs, love eating them even more. Live in Washington state. I have an oaklahoma joes long horn smoker. Been reading up on modifying to dial it in. Currently I use fire bricks to help hold temp and to direct heat to rear of CC. But have been seeing that a lot of you use steel "tuning" plates. Anyways I will be reading more and chiming in. Thanks
