Hello from Texas with MES40

Almost finished seasoning a new MES 40 first gen (20070311). Thanks to all of the great info found here, yes I understand what I may be getting myself in to. Ordered the cold smoke attachment. Still need to get the good probe.

Why an electric smoker? Convenience over our wood smoker, and when it's 100 degrees for days on end here in this part of Texas, ya just don't really feel much like tending a fire.

Look forward to learning much more, and contributing where/if I can.

Welcome to the group. Electric, propane, charcoal, or wood it all works. Just what you like or in some cases have time for. I do mostly smoking on the weekend I'm off work and like to spend the time using wood. Good luck with the new rig and keep smoking. People here like pictures of rigs an Q view as well.

Welcome to the club! 100 degrees in Texas? You must be talking about spring time when the pumping units are in bloom.
