Decided on some beef ribs, as I noticed them at the local market at a super reasonable $2.99/lb. They were the prime-rib/rib-eye steak leftovers from the butcher who wanted boneless cuts on the shelf. Their loss is my gain! One rack seems extremely meaty, and the other is a little thinner of a cut, but a good looking set of racks all the same (I know, what rack isn't good looking...walked right into that one).

Here are the prep and on the grill pics... will follow with more as they come...



Just a simple salt/pepper/garlic powder rub and on the smoker with a little hickory!

Update... The finished product!

They came out amazing....


Nice meaty ribs... tender, good fat rendering, and a decent smoking ring...


The finished plate... a couple ribs, some Thai chili garlic and smoked cheddar mashed potatoes, and that green leafy thing in the corner... ENJOY, I know I will!!!

Whoa! 2.99? I just got short ribs on "sale" for 4.99. I knew i was getting ripped off.

We have some beef ribs that are 1.50 a pound but they are basically just bone. They trim WAY too much off.

When I get my Prime Ribs, I have them cut the Dinos off like that, and keep them separate from the Boneless PR.

Last time I ended up with 14 pounds of Prime Rib Dino trimmings, but they cost me a lot more than $2.99.

I think I got lucky on the price, the local butcher mainly wants the prime rib or the steaks, not so much the bone portion. Figured he just put them out hoping to get something from them.. Beef is pretty pricey around here at the moment so figure I just got lucky, but i'll be checking again next week!
 
Looks great. I love the flavor off of the Kamado. I've had one for for about 45 yrs. I've smoke almost everything on it. Looks like a great smoke on it.
 
Those look mighty tasty!  I was looking at my butchers and they had boneless country beef ribs for $1.99/lb but it just didn't seem the same....

And it probably wasn't even Ribs. Could be like Country Style Pork Ribs----Not Ribs either.

The ones you saw were probably cut from the Chuck Eye Roll.

Yup. Beef "country" ribs come from the shoulder. It tastes more like a blander chuck rather than the rich, beefy rib flavor. Just my experience.

Glad I didn't pick them up then........although I'm sure they were still tasty.  Just not "rib tasty"...
