I had a difficult time getting thin blue smoke all of the time. The ribs were really good but too smokey. They turned out the best. I should have wrapped everything a little earlier. Perhaps the hickory wood was not cured enough. I'm hooked though, I can tell you that for sure!!!

The smoker seemed to burn cleaner when I had a flame going at all times.

I'm going to try some "practice" burns to get the tuning plates adjusted. Headed back to the mountains this weekend, courtesy of a good friend that has a cabin. We'll probably hike, grill, and have a good time.
