Got a nice 11 pound boston butt for 2.39 a pound. Gave it a dry rub and put it in the fridge, will go on the smoker when I get home tonight. Also, my replacement maverick 733 came in today, and it works flawlessly. Qview to come
Question: I've had the butt in for about 20 minutes, the temp read 36 when I put it on, and it's only at 37. Is this normal, or did I put my meat probe in a fat pocket?
I would think that would be pretty much normal. I don't put the probe in until the meat has been on for about four hours. Also I take the meat out of the fridge an hour or so before smoking. Ernie
Are you planning to foil? Just wondering as I usually foil, but I think I might try a butt sans foil...I don't think I've ever smoked a butt without foiling. Anywho...please post some q-view when you finish her up!
Looking good so far. I never foil.....try without one time. Mine always have a great bark all around. I dont like mushing up my bark with overly moist bark.
