 Hello all. My name is Josh. I am new to the forum, not to grilling or smoking. I am nowhere near a grill master, I surely try.  I will smoke/grill anything atleast once. I live on the east coast of North Carolina. I currently use an oklahoma joe horizontal smoker. I am in the process of doing a few mods to stable the temps across the cooking area. I have been reading through many threads and I appreciate all the great information people are posting. I am gonna do my first fatty tomorrow because of this site, never heard of it till I started searching this site. I am sure I will be doing many more recipes from here.
 
Hello and Welcome to our addiction.  A word of warning: There is no 12 step program for this one!  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have, and pictures help a bunch.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  Check out Jeff’s 5 day smoking E-Course ( link below ) that will help you get started.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!

Evening out the temps is the biggest challenge with any cheap offset smoker. I know because I have one. The best thing I did was to buy a baffle online. I stumbled on a website by dumb luck and I'm so glad I did. I think they cost about $36 with the shipping. Man I'll tell you what, it evens your temps right out. www.kickassbbqsouth.com

The sad part is I stepped up from a really cheap charbroil smoker to this. i have a harder time keeping temps in this one. Don't get me wrong i enjoy the cooking area on the new smoker. Just having a hard time adjusting. As the wife says its the stubborn part of me that won't adjust. I am learning...hopefully. Thinkibg the mods will make it better.

Thank you. It was delicious, Thanks to Silverwolf636 for showing the way. I also sauteed some green beans, with left over mac and cheese.. Did it with swiss and spinach, no rub no sauce, will experiment more now that I know. Didn't add the smoke that I wanted but that will be during the next smoke.

Added a plate near the exhaust stack. Gonna smoke a turkey tomorrow to try it out. Will post pic of mod and turkey tomorrow. One mod at a time to see. The problem is I use my smoker as a grill as well. Don't want to do much that will cause me to lose grilling surface.
 





Dinner This evening. Turkey with garlic, onions and green peppers in pan. smoked potatoes. sweet peas.  Turned out good.

Also smoked some sliced bolgna and hot dogs I am not used to taking pics. so didn;t get any before kids ate them.

Tossed some jalapenos on to see how they turned out smoked. To stuffed to try tonite.

 Still need to do add a plate to deflect flames/heat near burn box to even temps out.
 
I had issue with my smoke hollow 4-1 with flame at fire box to cook chamber, added plate and helped out with that issue. I wonder if your plate by the stack will effect air flow through cook chamber. May need to change it after adding plate at fire box. Good luck and let us know how it turns out.
 
Still got some tinkering to do with it. My main issue is I still use my smoker as a grill, My weber charcoal is just not big enough to do everything I like to do. I am just not a gas cooker, even though I just picked up a weber Q for free. Gotta get some gas and try it out. Sad I have nevered owned a propane bottle. Always been a charcoal griller. I am gonna try and add another plate by the fire box and see how that works. I don't wanna add a full baffle just yet. I think that will take to much room for how I use it. Think I am on the right track, atleast it was only about 75 degrees off between the two thermos in the lid. The one on the grate was about a 125 different. It's closer then it was. Will update as I can.
 
I appreciate it. I have learned. I can pretty much smoke anything. As long as I have enough time and a stiff drink in my hand. I am glad I have found this site. I have seen a few things on here that have helped me out. I am just hoping I can share. My biggest problem is I forget to take pics/notes of what I do and how it finishes. I am getting a lil better. I actually started writing stuff in a note book. I am just hoping that when it comes down to it I can remember to write it all down for later use and to share. Thank you to all that have contributed even the smallest thing that they might think is useless. One man/woman's trash is anothers treasure. I have had many failures, from to much smoke to to much rub. I wish I would have found this site many years ago. might have saved some heart ache and yelling......Doubt it. I am just hard headed like that. gotta figure stuff out on my own.

I appreciate it. I am also using this site as a log book. which seems to help me keep track of what I do and how I do it.
Here is a pic of my old grills. The one on the left is a brinkman that i bought and started to fall apart in less then 2 years. The one in front is an outlaw that some one give to me, because it was falling apart to them. I have used it for 3 years since then. Looks ruff but still does its job. It now sits off to the side getting ready to be regifted as I don't use it anymore since the new longhorn.
