OK going to do some pulled pork and going to try some different to me stuff. I got one of those foil pans and put it in there too put rub on lot less mess on counter. Put foil over that to let it sit with rub on. My question is can I just take the foil off and place in smoker or take out and put in clean one. I plan to smoke this one in a pan and see how it is.

Yes, you can put your pan straight in the smoker.  However, it's been my experience that a butt gets better smoke and a better bark if it sits directly on the grates...although its is more convenient and easier to clean up in a pan.

Good luck, and let us know how it turns out!

I normally put on grate but thought I would try this way once. Also it's a 9 lb butterfly going in a gen 1 mes 40 with an amazing. So figure12-13 hours so going on around 1:00 so will be my first overnighter

Fordman,

FYI: It helps if you put a wire cooling rack in the pan for the meat to sit on. That way it doesn't lay i it's own juices, and the smoke can get to all parts of the meat.
