Just wanted to share some pictures of my new rig.  I've been on here for a while, envious of all the beautiful cookers and really wanting to build my own.  I have been collecting ideas so I could incorporate them into my vision when the time was right.

Well, while looking for a new small patio offset to replace my old one, I stumbled across a Meadow Creek at a price that I  couldn't pass up.  I've admired Meadow Creek and wanted to include a grill like their Chicken Cooker when I built my trailer rig.  Luckily, this one had everything I wanted....a reverse flow offset stick burner, a chicken cooker, and a hog cooker.

Here's some pics of the rig along with some of the end results from a few cooks.  All I can say is, it's a lot easier to get good results on a good cooker than on one with air leaks everywhere!

Here's some Q View....so far.

I'll add some more pictures to this thread later.

Here's my twist on Chicken Cordon Bleu.  Chicken with layers of cheddar, mozzarella, deli sliced honey ham, wrapped in bacon, with my rub sprinkled on top.




With some fried cabbage and fresh sliced tomato.




10 lbs. of leg quarters.  It will hold 40 lbs.





With Myron Mixon's chicken glaze sauce I made from the recipe in his book.



My first Butt for pulled  pork cooked on the TS 120 with Pecan Wood.




This is some country air dried sausage.  Completely different taste and texture when cooked on the TS 120 versus the frying pan.


I cut a diamond pattern in the fat cap so it rendered better.


Smoke ring in the country sausage.


My first Brisket on the TS 120.  Only my second one ever.  This one was fall apart tender and moist.  I injected it and marinated it in a vacuum seal bag in the fridge overnight.  I used Myron's method of hotter and quicker and it worked very well.



Some homemade baked beans and potato salad and some ABTs stuffed with cream cheese and cheddar and wrapped in bacon with some BBQ rub sprinkled on bacon.


Cooked another 10 lbs. of  leg quarters at the fire station yesterday.  Didn't put any sauce on these.  The skin was absolutely crispy and amazing.  We had sauce on the table for dipping.

I "fried" some green beans in bacon grease with garlic salt and black pepper.  I fix cabbage like this but it was the first time I tried green beans.  I will be making them again!

Thanks.  After some practice with it, I plan on doing some small catering jobs to justify buying it.  I already have a request to cook a pig for a baby shower.
 
Nice rig,  I have a meadow creek also, the TS250 w BBQ42 chicken cooker,(click on my picture) I hope you enjoy yours as much as I do, We do competitions and diferent events with it. Hope to move into making money with it also one day lol.   Enjoy it

Mark, I was planning on building one like you have until I ran across this one which also had the PR 60 Pig cooker.  The PR 60 has never even been used but I plan on doing a pig soon.  I'm actually glad I got the TS 120.  I think the 250 would be a little too big for me and with the PR 60, I don't need it bigger to be able to cook a whole hog.  You have a nice looking rig!

I do wish the warmer would take a full size serving pan.  That way you could go straight from the warmer to the steamer.

Wow, that is quite a rig! Congrats on the new toy.

But you can't just call it the TS 120 - it needs a name...
I've been trying to think of a name for it.  Does anyone know if your competition name has to be completely unique to just you?  Didn't know if I should try to find a list of team names to make sure I didn't duplicate someone else's in case I ever decide to compete.

I love my Meadow Creek CD108G puts out some amazing Q. The quality and craftsmanship of Meadow Creek is second to none. And yes, I have had many cookers. My next will be a TS500 with a chicken cooker.


The Meadow Creek chicken cooker is the best out there hands down.

Nice caterers delight!  You can do a lot of cooking on that!
