Well I had a question about baffles in a smoker. I built this smoker out of a CO2 tank. It was going to be a vertical smoker until i cut it open and found the inner tank. The fire chamber is in the bottom and the cook chamber is on top with a small hole cut in the top for smoke and heat to enter. I was thinking of just welding a piece of flat steel sheet over the opening to direct the heat and smoke to the farthest end of the smoker. I did a trial run this weekend with 15 lbs of charcoal and it still had coals at the 7 hour mark. I have some temp gauges on order to install in the lid and the food grate is almost complete. I have no air holes in the bottom just some latches on the bottm door not seen in the image below to keep the door shut, so just air leaks keeping the fire lit. Any recommendations would be greatly appreciated.
