I'm new to the site and was asked to muster so her goes,

I'm a retired Navy Chief living in Northern VA, with my name meaning exactly what it says O 2 B N TX. I've been eating competition grade brisket and ribs from my wife's family for 20+ years and decided to start trying to do it myself. I recently purchased a Char-Griller Pellet Smoker.  I love the ease, but have yet to master anything that I would share. So far the best I've done is with Chicken and Turkey but ribs, pork butt and brisket...its all crap.  Hoping I find some like minded smokers out there that could help this misplaced Texan smoke something other than fowl!!!
 
Hi from Northern Illinois. May I say thank you for your service of this country. I think I'm the opposite, I've smoke more beef, and pork then I have fowl. Have you tried using different woods, and rubs. I like to use Cherry or Apple woods and have used Apple or even Orange juice to add flavor. It will a come together for you and this site is full of people willing to help and share info. Good to have you here. Keep smoking LOW AND SLOW.
