Second time smoking a butt..7.5 pounds. Put it on at 5:45 am @250. Pecan, apple chip mix with 2 hickory chunks each time I added chips. 7 hours in I am at 156 degrees... Foiled when I hit 140, with apple cider vinegar spray pre foil. Smoker temp ramped up to 290-300...plan to get to 200, pull and wrap in towel and stow in cooler...hope to eat around 4:30...will post pic when I pull it off...
 
Your plan should work but you could have waited to 160 or a little more to foil. Helps with bark formation. I would take it to 205 internal to insure good pullability. Happy smoking! timber
