Hello everyone. Just introducing myself. I live in Ottawa ontario ans so happy to see that spring has finally arrived. I am not new to bbq'ing and love my basic weber charcoal grill but I am new to smoking meat. I just bought a 30" masterbuilt electric smoke and used it for the first time last weekend. Chicken and ribs. Chicken was fantastic, ribs ... Well I need more practice.

Have no fear! Stick around for awhile, do some reading, ask questions and you'll be making awesome BBQ in short order! You'll probably need an after market temp sensor or at least find out how far and which way the factory sensors are off. They're off on most of them.

Hello and welcome from East Texas, that's always a good reason to fire up the smoker, Practice, Practice, I've been practicing for 40 years, May practice some this weekend.

I'm looking forward to the "challenge".  I love to cook, although my real job has nothing to do with food.  The smoker has always been an interest, although I have no problems with my simple outdoor grill.  So now using the smoker is a whole new adventure for me, but I understand it does take some practice to get it right.  I hope this forum will teach me some tricks from the more experienced outdoor smokers.

Main thing is to have fun and enjoy, don't over think it. I have a brother-in-law who makes a big production out of grilling and smoking, checking everything every few minutes and when he is through, he is worn out. makes a big deal out of it. Crazy, When you first start you do need to pay attention, even helps to write everything down. Then finally it just becomes second nature.
