Thinking of making some jerky in my new electric smoker - Anyone have a good recipe?

I have some pink salt from when I made bacon last August, and it's getting nice and warm out, so I was thinking why not make some jerky?

Anyone have good recipes? We like peppery jerky, but we're open to almost anything.

I'm not much on the wet ingredient marinades such as soy sauce, but have had good results with dry blends.

This one's been a big hit with family & friends, and has had a lot of interest here as well. It's quite spicy, and I had one member tell me the hot version was enough to get his wife's attention (a self proclaimed heat-seeker)...in his words, I wasn't kidding about it being hot...so be warned on that. If you're worried about a bitter after-taste from the cayenne (doesn't seem to be the case when using it with white pepper), just add a pinch or two of cinnamon to the recipe...seems to smooth it over or cover it up quite well when I use it in other applications. I've made these with TenderQuick, but just use the recommended amount of pink salt per pound of ground or whole muscle meat instead of TQ.

A large batch of thick sliced whole muscle, start to finish...this was a huge hit...there's nothing quite like a heavy slice of jerky to chew on:

Another old favorite...not quite as spicy as it sounds...packs a little heat, but is more about the flavor...uses ancho (sweetest of the chili peppers) and new mexico chili...very unique flavor profile:

Welcome to the world of home-made jerky!!!
