Hi Everyone,

I live in Greeley, Colorado. I was trying to smoke stuff on my regular gas grill and finally broke down and bought a Brinkmann Gourmet. I want to make sure I'll use it a lot before I get anything too fancy. So far, so good, but I have a lot of questions. That's how I ended up here. 

Sorry about the really lame screen name. I have a lot of interests and my usual screen names, but nothing really fit for the Smoking Meat Forum. I'm sure I'll come up with something better now that it's too late. ;-)

Welcome.... And I kinda like the screen name. I too am a bit of a newbie here...... And just bought my vertical smoker in February after using my 'very' expensive built-in 3 burner natural gas grill, but disliking the indirect smoking results. There is so much information here it could take you days to read through it all. And I bet you will find that there is probably a topic already here for any smoker or technique that has been tried..

Every one I have chatted with or asked questions of on here has been really helpful, and willing to point you in the right direction.

I can see where I'm going to get into trouble. I just wanted to find out how long I should smoke this store-bought stick of pepperoni, and now I want to make my own. I just bought a cheese-making kit because I want to make my own horseradish cheddar. I'm the world's worst at wanting make everything myself. We went to talk to a funeral guy about prepaid burial plans, and I wouldn't agree to a cookie-cutter funeral - I want to plan it myself! LOL My poor boyfriend. Not sure if this is a good thing or not.
