3'x3'x6' tall. I still have a ways to go, I just pick off a few things every weekend. :) My goal is to fire it up for memorial weekend and smoke a loin or ribs.

I am going to use a Carolina dbl burner with cast iron pans.

If those burners are propane, take the extra step with safety and have "flame out" shut offs installed.....

If the flame goes out, and the smoker starts to fill with propane, that would be one really cool propane bomb....

Some folks choose electric heat to avoid that safety issue......

Can you direct me to a "flame out" shut off? I have looked into adding a gas oven setup with a pilot light and valve. Is this what you are asking about? I sure could use some help with the parts and install for the gas oven set-up?

Any color ideas from you'all? I am leaning towards a copper orange look for the door. Shoot me some color pallets? three colors I think. Earthy exterior colors. Trim boards, metal roof trim, and door panels.

Not really..... they come standard on hot water tanks, furnaces, ovens..... in the event, for some reason, the flame goes out, the gas is automatically shuts off so you don't have an explosion..... Just something to consider.... I know propane is easy, and everyone does use it..... Just pointing out one drawback...

Dave,

I have looked into the oven set-up. The size of my smokehouse will let me either use LP or I can drop in my little weber and use coal and wood. I will add the safety valve set-up in the future, just need to get some help on set-up and or a kit to buy.

Look for a thermocouple controlled safety valve. Using this will require whole pliot light set up.
A lot more complex but will make it SAFE.
