Bad day to be a pig around my place....

Volunteered to provide some pulled pork for my kids school, and I couldn't stand the sight of an empty top rack on the smoker so I decided to toss on some ribs for dinner.

.... butts still got about 5 hrs. to go.... but dinner was great!

..... OK finally got to finishing up the butts. I had foiled them and tossed them into the fridge last night since it was 2:00 AM, so I put them into a 250° oven for about 1 1/2 hrs. to warm them up so they would be easier to pull.

Right out of the oven.

First butt pulled and in the bowl.... both butts are for my kids school so just going to pull them and vacuum pack them for delivery.

.... of course I kept a little for dinner!

Oven fries, broccoli, and PP sammy. I put Beaver Sweet Hot mustard, pepper jack cheese, Famous Dave's Devil Spit pickles, and a little mayo on the sandwiches..... they were awesome!

Yeah - her entire litter was the had the best markings I had found on St. Bernards ever. She won't be a giant - we think she's going to top out around 130-140 lbs., she's right at 100 lbs. now.

.... and of course she thinks she's a lap dog! lol
 
Thanks all - the ribs were very, very tasty! Just had some for lunch as well!

..... the butts came off really late (wicked stall) so I won't get a chance to pull them till I get home tonight. I will post a couple of photo's when I get that far.

just sitting here with that almost too full feeling.... but god it was good! The pickles put it over the top - they are my new secret weapon for sandwiches, potato salad, egg salad, and tuna.

Smoking B - was just looking at your cupcake thread.... lol. Sounds great, but I couldn't eat another bite tonight.... lol.
 
All looks great JI .... Thumbs Up. BTW, Henry Weinhard's is a great brew ! :biggrin:

Thanks - funny part is there are so many fantastic micro-brews here in Portland that Weinhard's is considered a "budget" micro-brew... lol. But I have a co-worker who works there doing brewery tours on the weekend, so she gets us cases of Weinhard's for cheap!

That's awesome for you, it's not the cheapest over this way but I have to get a Private Reserve or Blue Boar fix every now & then ! :cheers:

I need a friend that does brewery tours ! LOL

I've never tried those pickles but I will keep an eye out for them. There's always another day to try one of those little cakes man - they are pretty good...
