Hello all.  I've been getting and reading Jeff's newsletter for quite sometime, but just joined the forum. I'm from NC and have a WSM cooker.  Looking forward to learning and mastering smoking ribs for my husband! :)
 
Welcome, glad ya joined us ! The WSM is a great smoker, I have an 18.5 .... If ya need any help, just ask ! WSM kicks out some great Q !
 
Thanks!  I have the 18.5" as well.  I've only used it once so far, but am planning to do some ribs, either baby back or spare ribs (St. Louis Style) on Memorial Day.   I'm looking forward to it!  I do have one question.  I'm planning to use wood chunks.  How many chunks should I use for ribs?  I was thinking 3... 
 
Hello and welcome JW, You could start with 3 and just play it by ear you may need to add more. Depends on several things, How fast the wood chunks burn up and the amount of smoke you are looking for.
