I have a ECB (Brinkmann) smoker. I have been smoking sausage and bacon.

My question is, is it important to use the water pan within the smoker? If so, why?

It is a heat defuser. Basically allowing for indirect heat. By removing the pan you essentially have a really tall charcoal grill not a smoker. Have you done any mods on your ecb?
 
So I need the water pan then!

I have drilled some holes in the charcoal pan and moved the legs to the outside of the ECB.

I have just bought a thermometer and a gasket to seal the lid which I will today or tomorrow?

Do you know of anymore mods?
 
I drilled holes in my lid and added a valve to adjust air flow. That and I also drilled holes in the charcoal pan along with adding some expanded metal grate to raise the charcoal above the holes by about two inches. Since doing that I've noticed that I have more consistent temps and I'm using less charcoal. Plus it's fun to tinker with them lol.
