Hi folks, new guy here.  I'm hoping to possibly purchase a large smoker that a friend built out of a 500 gallon propane tank but I haven't gotten to try it out yet and he hasn't given me a price for it yet so it's far from a done deal.  Anyway, in the meantime, I'm doing my homework and looking at everyone's recipes and suggestions but I have a question.  Has anyone done a fattie on a regular gas grill?  I could add smoke packets but I've tried that before and it's never really the same.  I'd just like to experiment some and get ready for the possibility that I may end up with a nice smoker.
 
I haven't done one on a gas grill but I did use a regular charcoal grill a few times.  Works fine as long as you use indirect heat and try to keep your temp steady and low (250ish).   I would light one burner place a water pan directly over the burner and then place the Fatty or what ever you want to smoke on the other side of the grill.  Good luck and don't forget the pictures! 
 
Throw one on there with a little smoke and it will be great, unless you burn it to a crisp.

I cooked one in my oven almost the whole way after my MES took a you know what, it tasted great.
