can I leave sticks over night in fridge before smoking?

Home is Glendale, AZ.
I have 5 pounds of elk/pork all seasoned up and ready to make into sticks.

I am not using casings.

Can I make my sticks and leave them on the racks in the fridge over night?

Or am I better off just getting a little earlier start in the morning and make them then?
 
Yes. just keep them covers with some foil or suran wrap. The fridge will pull the moisture out of them.
 
Yep I put mine in fridge over night cased or before casing next day, let us know how it turns out. Your fridge will smell great, and every time you open a cold one you will be able to smell the goodness!!!

Well, thanks for the tips there guys. I actually wound up making the sticks this morning and stuck them in the smoker about 9. Anxiously waiting

Just to clarify, I did mix the elk,pork and seasoning together way ahead of time and covered and refrigerated it for about 36 hours.
