does the size of a brisket change what temp to cook at? i never usually buy a full briskets and my briskets are usually somewhere in the 4 pound range. and i never get a good bark going on and my brisket is too dry, i usually keep it pretty now in the 225 range

I smoke brisket at 225-250 no matter the size

That's the same size I buy. I smoke it at 225 until the internal temp reaches 195 pull and let rest. It usually smokes for around 7 to 8 hrs at that temp. For a better bark turn your smoker up to 400 when the Brisket reaches 180 to 185 for the last 30 min. I also inject my Brisket with beef broth the day before.

I go 225*F for 1.5 hrs. / lb. ,do NOT open my lid till finished and use my ET-732 for temp. to 200*F IMT.  Pull and rest - wrapped in a cooler.
