I'm goouing to do my 1st Boston butt this weekend.I  was wondering if most of you add sauce to the meat after you shred it, or let your guests add their own.

I add a Finishing Sauce. Adds extra moisture and another level of flavor. You can add or adjust any ingredient you wish. The meat can be served/eaten as is or you may choose to add other styles of BBQ Sauce on the plate or sandwich...JJ

Tangy Pulled Pork Finishing Sauce

This is more of an Eastern North Carolina style Finishing Sauce...

2 C Apple Cider Vinegar

2T Worcestershire Sauce or more to taste

1/4C Brown Sugar

1T Smoked Paprika

2 tsp Granulated Garlic

2 tsp Granulated Onion

2 tsp Fine Grind Black Pepper

1 tsp Celery Salt

1 tsp Cayenne Pepper or Chipotle powder. Add more if you like Heat.

1/2 tsp Grnd Allspice

Optional: Red Pepper Flakes to taste.

Combine all and whisk well. Let rest, at room temp, a minimum of 30 minutes for the flavors to meld together. Or bring just to a simmer and remove from heat...

  The finishing sauce is great for extra flavor. I always let the guests add bbq sauce themselves. I use very little because I don't want to cover up the flavor of the meat and smoke!

If I'm doing normal pulled pork I always add a finishing sauce. I also serve a sauce on the side that is more like BBQ sauce for those that want.
