First try at Prime Rib

Made my first attempt at smoking a prime rib for Mother's Day and have to say I may never order from a restaurant again.  Turned out amazing.   Used the Jimmy J's Au Jus recipe to finish it off.

Applied a light rub the night before and then pulled and let get to room temp at 630am.

Put on the smoker at 10am and randomly checked IT about every 1.5hrs.

Smoked for roughly 5 hrs @ about 210 using mesquite and cherry wood.

Pulled when IT hit 135* and then let it rest in the cooler for about an hour.

What a fantastic looking prime rib.  Congrats on such a fantastic smoke.  That comment highlighted in red above is a VERY common result of the delicious creations we smoke in our backyards.

I thought it looked familiar.

I don't think taking it to room temp in 3 1/2 hours is a good idea though. I would go right from the fridge to the smoker, and not probe it for the first 3 hours.

Tasty looking prime rib! The only way to make it better is to dry age it then smoke it. Oh man is that good! Search here for Mr T's dry aged prime rib.
 
I think you just got that prime rib perfect!!! Resturant?  what's that LOL.  I tell my family that my resturant is my home. Reinhard
 
Terrific looking piece of beef. As someone who worked on the road a lot, home made is always better! Keep on smoking!
