Hi. I'm Wyobraska!

As my name implies, I'm from the panhandle of Nebraska. I live about twenty miles east of the Wyoming border in a small town of about 15K people.

A couple of years ago I bought myself a Traeger Lil Tex pellet grill. I also upgraded the thermostat to the digital one so I have better control over temperatures, and added another thermometer to the hood, so I can make sure everything is working like it should. However, I cannot tell a lie... I have never grilled anything on it. I have a Weber kettle grill for that if needed. I use the Traeger for smoking only. Low and Slow is the way I like to cook, so this fits my needs to a T. It's so convenient to just set the temp I want, make sure the hopper is full, and throw meat at it.

I just found your forum a couple days ago, in my search for learning how to smoke a fatty (the meat kind). Turns out you guys have an AMAZING section dedicated to just that topic, so I learned quite a bit.

This morning, I decided I needed to apply my newfound knowledge, and I smoked two fatties. One pizza fatty, and one philly steak and cheese fatty. They turned out fantastic. You can check out the pics I took here: http://imgur.com/a/YTJ5a


I just wanted to post and introduce myself, and say thank you to everyone here for creating and maintaining this awesome community. I look forward to many more eventful smoking sessions, and all the new things I'm going to learn by reading what is posted here.

Hi Tom! It's nice to make your acquaintance.

I was really, really happy with how the fatties turned out. I didn't think they'd be nearly as good as they were.

Where at in WYO are you from? My wife is from Wheatland, and I have a cousin in Lander. It's such a beautiful state, and there's so much open space. Western Nebraska is OK as well, but I wish I lived about thirty miles west so I could avoid the state income tax...
