Wow...this post is making me incredibly jealous of your packed smoker. That prime rib is incredible looking. Bear's technique is great! Can't wait to see the briskest and butt!

It's not a difficult process. Cook some meat with low heat using wood. If you can't use wood, infuse it with a little smoke.

I think most people over think the process. The container which the process is done in really doesn't matter. I could easily use a leftover box. But, if I was going to go that route, I go see one of my Army Brethern who are still in and get me a couple of those MRE boxes. Those are about indestructible, We used to make furniture out of them!!!

I could actually probably put 2 briskets per shelf as long as they're not bigger than 17 lbers! I also didn't have nothing for the bottom rack so I left it out. Maybe someday for a party!
 
Vacmaster Pro260 ordered!! That's some amazing customer service from Lisa and John!!! I had called the number at about 7pm, not paying attention that it was after 5pm and the weekend. I guess they were out or something but it's 9pm and John called me back!! WOW! Said he was sorry for disturbing me after i said Wow it was a friday and 9pm, not that it bothered me!! 

That's some customer service!!! He also more than answered all my questions!! Then I checked and I had a return PM from Lisa on here!! Them jokers is tag teaming me!!!

We had prime for dinner. 

I had a pork taco for lunch and nibbled some brisket while slicing and packaging!! ALL good stuff!!
