I love slow smoked food. I have been using a cheap R2D2 smoker for years but never really enjoyed using it. I decided it was time to get serious and upgrade to a nice heavy offset. I was planning on getting the 16" Horizon Classic RD but when we got to the store my lovely wife said it looked to small and upgraded me to the 20".


I have been using it for about a week and have done a rack of ribs, a chicken, a beef roast and some sausages. I think I may be addicted. Here is a pic of the chicken.


Today I have put on 2 racks of ribs and will be using the 321 method. It will be the first time I have wrapped my ribs. I'm looking forward to learning the finer details of smoking meat and sharing my adventures.
 
Welcome to the forum, nothing like getting a new smoker, Chicken looks good, be sure and post pictures of your ribs.

Looks great !!!   I haven't done the potatoes and onion's in a pouch in a while, kinda forgot about them, glad you did some to remind me.
