Loin chop question

I just got back from hog hunting. When they processed my hog the pork chops were done boneless and about an inch thick. My question can I stack two together and tie them to he a better end product. Or should I just smoke the for less time as 1 chop each
 
I am sure you will get a lot of different answers, but if it were my chops, i would do the individually since the were already cut.  Welcome to the forum from East Texas
