First ground jerky

So the wife and I normally get our roast (don't recall what kind) and the butcher slices it for us to make our jerky.  We have done tons of batches in the Excalibur dehydrator.  It never lasts long at all as I love the stuff.  I read some posts here about ground beef jerky and thought I would do a small batch to see if I would actually like it.  I'm gonna toss it in the smoker for about an hr or two then finish off in the dehydrator.  Didn't follow a recipe just made it up myself.  It's sitting in the fridge until I get home tomorrow then I'll finish it off.

I ground 2 ancho chile pods, added garlic, onion powder, cumin, salt, fine black pepper and my homemade habanero/garlic paste (toasted habaneros, toasted garlic and sea salt crushed with my mortar and pestle).  Used cure #1 (1/5tsp) with spices and a little water to make a paste.  Mixed it all together and tossed into fridge. 

Will update tomorrow as it progresses.  How long does GB jerky normally take in a dehydrator

I thought I posted final pace next day. Will have to look when I get home. I stuck them in dehydrator for about 6 hrs and they came out pretty decent. Wife said too much heat but I thought they could use more. Texture was actually a lot better than what I thought it was going to be.
