Haven't posted to the board in a long time. Had a bradley digital, it flaked on about the 5th use, so it got returned. Bought a Landmann 30" electric. Liked it, but didn't love it? Luckily, bought at costco, and about 10 months later (and probably only 20 uses) i took it back. Full refund, and went down the street and bought a 22.5" WSM. I love the WSM. I smoked today in the May snow (wtf?) About 1C/31F. Smoked for exactly 6 hours, in a rack, at about 225-230 the entire time. I left the house for a few hours and had a temp drop to about 205, but got it back up quickly, and it didn't seem to cause any problems. My wife says there's too much rub on, because it is a little salty. I did 4 racks (in a weber rib rack for the first time ever) and used 4 different types of rub, 2 homemade, 2 store-bought. I rubbed 2 lightly with some stubbs, about 1 hour before they were finished. I will include some pictures in the next post, I am typing this on my computer, but took pics with my phone. I am thrilled with how they turned out, much nicer than with my 2 previous electric smokers. Looked to have great bark, nice pink ring inside, handled the "folding" doneness test like a champ. Taste excellent, not dry at all. This is the first time i've not gone with the 3-2-1 method. Check the pics and any tips and criticisms/etc would be appreciated!
