Looks really great. But with such an experienced staff of chefs working there in your kitchen it would have to be great.

Oh yeah reverse seer is the only way to go!! Love that smoke flavor you get into a steak then get a nice char from the seer. Hmmmmm making me hungry just thinking about it!Thanks Brooksy, I appreciate it ! If ya have not tried the reverse sear.... I highly recommend !

I had checked out the tenderloin, can't believe I didn't post cause it is a really nice piece of meat beautifully done.

Hah! I meant they didn't look like center cut, it looked like they were cut from what they call the "head" of the tenderloin. Can you imagine if cows had tenderloins hanging off their heads? That'd be one weird looking animal.Thanks ! The tenderloin is located towards the back of the beef, between the sirloin & top sirloin, before the round.... Hope this helps !
