The weber hot squat

For those of you who dont know what this is, when using a bullet style smoker wsm or whichever. its when you remove the middle section and the lid as one and place it to the side to tend to your fire.

When I first started smoking last year this was quite the feat but now that i've done it many times its easy peasy. For the new guys just keep at it this addiction definitely gets better with practice!

Yep, that's how I do it with the mini-wsm, when needed, which isn't very often. Only for really long smokes. usually when I am doing this its time to sear whatever is in the smoker. Which Im not sure why those that have the 18 & 22 WSM's don't do. I know that I would. Go cave man style and put the meat right on the grill if you don't have a spare grate to do it on!
