I plan on smoking 3 racks of St Louis ribs this weekend in my MSE 30. I just received my AMNPS and was wondering if I should light both ends or just one end for ribs?
 
Depends on the flavor wood you use.... Heavy flavor like Mesquite.... NO...... Light flavor like apple ..... You could light one or both....
I would start with one end and smoke for 2-4 hours..... do your taste test for the next batch..... I find too much smoke is worse than a mild smoke....
Be sure to dry the pellets well so you don't have any trouble with them staying lit... I dry mine for a couple-three hours at 275 in an aluminum pie tin... sure helps to keep them smoldering so the smoke doesn't quit....
Leave the exhaust vent wide open and open the chip chute 1 1/2 to 2".... and pull the chip pan out an inch or so.... those tricks help to keep oxygen in the smoker so the pellets burn well..... Set the AMNPS on the wires to the left of the chip pan, up off of the bottom of the smoker.....
Do not use water in the water pan.... add sand or gravel for thermal mass..... Water in the pan creates steam, which will extinguish the chips....

I know cherry pellets don't burn too well.... they need something like hickory or oak added to them to get a smolder that will keep smoking....

Anyone know about cherry dust......

check the 6 x 8 and see where it will fit in the MES 30...
