That loin was so good that I turned into a complete hog & ate all the rest of it today!

Since the stuffed mushrooms weren't gonna carry me through the weekend I had to make something else today. I'm getting ready to add that now...
I could easily see it was super juicy!!!

LOL---I used to eat like that when I was a kid of your age, and even up to 60, but can't do it any more.

Enjoy piggin' out while you can!!

Ok I admit I was a hog & ate the rest of the loin today so in order to have enough food to carry me through the weekend I had to make something else today - I began pondering

While I was thinking I kept going with the pumpernickel rye bread.

Here is the starter I got going yesterday afternoon with the rest of the ingredients.

Here it is all mixed up & after a LOT of kneading.

Oiled & in a mixing bowl to rise...

It was at this time that I decided to use the rest of my dry cured country ham I was saving (I only have one left now

)  It was worth it though because I used it to make a batch of old fashioned country ham pot pie

I put the rest of my country ham in for a couple hours

to get some great flavored broth.

While that was cooking the bread had completed the rise & was ready to punch down

& put in the loaf pans for the second rise.

By this time the ham was done so I took it out, peeled some potatoes, put them in the ham broth to cook &

started on the noodles. This is all the water I use in my noodles. I make up the rest with the great flavored ham broth - it makes for some mouth watering noodles!

I pulled the ham off the bone & chunked it up. The potatoes got done so I took them out as I finished the noodles.

Some noodles being made up

& added to the pot as I get them cut...

Then they cook on their own just like everything else to take on even more flavor

The bread finished its second rise

& I pushed it down for one final rise - the one on the right looks goofy but it will come right back with this last rise.

Final rise done & egg wash prepared.

I gave them a generous helping of oats

& put them in the oven.

The noodles finished cooking so I added the ham & potatoes back in & left everything meld together while the bread baked.

Bread out of the oven & cooling...

I decided to have a fresh slice.

I hadn't made this recipe in a while but it turned out really good.

Not bitter like most store bought versions are...

Close up view...

By this time the ham pot pie was ready to eat so...

I got myself a nice portion & chowed down.

close look at the country ham pot pie... Yummmmm....

Thanks Bear - I'll keep that in mind

Sometimes I just can't help it & by the time I realize what's going on there isn't enough left to bother saving so I figure I might as well just finish it & be done with it

It probably happens a little more than it should!

Thank you for your response Smoking B. You learned very well! Your cheesecake looks luxurious & I keep looking at it.

I've lurked around here off and on for a while but I had to join to say that that pot pie looks wonderful! That's the way my grandmother always made it too. Did you use a smoked ham to make it? Your breads, cheesecake and everything else you made looks incredible too!!

 That's good to hear man.

Maybe some trotters with noodles...... inspirational!  Why is there no fresh hocks anymore?
Thanks man - she did pretty good these last few days

Trotters & noodles does sound good! I actually have a few hocks from a butchering party a couple months ago when it was still cold. I smoked them & have them in the freezer. I'll get them out & make something with them for you this week

No it's not - if anyone is interested I will make a thread in the dessert section showing how to make the cheesecake...

Yes I did use a smoked ham for the pot pie. It was a dry cured ham that I made.
