I could not decide what to smoke today while brewing a batch of beer, so this is what I came up with.....they all turned out pretty good:

Bacon Wrapped Cornish Hens
Duck Legs
Bacon Wrapped Jalapeno Peppers stuffed with Jalapeno White Cheddar and Haggis

Has anyone smoked with Haggis before? The texture turned out pretty good and the jalapeno pepper gave it a nice spicy flavor, even the wife ate it which was a little shocking. I used hickory chips, smoked the fowl until ~165F IT, I brined the night before, my rub was 3 parts Kosher Salt/Black Pepper/Garlic Powder and 1 Part Cayenne.

I was too hungry and my hands were too messy to get any internal shots of the birds, the hens were really juicy and the duck legs were tasty but really fatty.
