I've been a lurker for quite some time and finally joined. We live in the interior of Alaska and I really want to get into smoking fish (salmon) and wild game. Have done salmon in a cold smoker which came out good but I'm going to build a hot/cold smoker. Want to do different forms of sausage with caribou and moose. Just purchased a stuffer and are getting everything in order. We did get a meat grinder last year too. We have done various hamburger with spices. I've learned a lot from the forum and am hoping to learn a lot more. Big thanks to all that contribute, I plan on doing the same. Pic's in the near future.
