I am at it again.

9# strip rubbed down with SPOG and resting in fridge overnight.  Going to cut thick and serve on a plate.

Can't wait!

Looks great!

I did one like that once. Smoked, sliced thick, and then did a quick and hot sear with the steaks. Came out fantastic!
