Just read a thread on the process of reverse smoking. Thanks guys now I have to go to sam's tomorrow and buy a whole rib eye loin and cut me some 2'' steaks and give it a try. I always buy it by the whole loin but normally cut my steaks into 1 1/2'' thick I think the extra 1/2'' will be perfect for reverse searing. Any thoughts of fresh garlic and butter brushed on before the searing?

Hey James, that sounds like a great plan... I sometimes get a wild hair and will rub down the steaks with peanut oil... Personally would recommend holding off on the butter til after ya sear as it may scorch ! If I do rub with peanut oil or not I just use SPOG, but to each their own ! Have fun, the RS is awesome !
