I plan on purchasing a maverick soon.I use a mav. I heard river country makes a good dial gauge.
Did some duck breast which I over cooked. Blame that on the adult beverages. Also some chicken thighs which turned out pretty damn good and some catfish fillets which also turned out pretty good. Pics of the chick!
I think the mini will be my go to smoker for small everyday cooks that is for sure. It performed very good. I was actually eye balling steaks but wanted to try something cheaper for the first run. It may be steaks on the next go. There will be pics of that I'm sure.For chicken a therm isn't really needed just run that thing hot! You'll get a great crispy skin and good smokey chicken.
Better get ya a steak or two so you can do some reverse searing.
Only one grate as of now Farmer. I'm thinking a second mighty be beneficial.The mini is a great everyday smoker. Do you have 2 cooking grates?

I'll be smoking some stuff in the big one this weekend. There will be pics I'm sureIt's my go to, so damn easy to get set up, and efficient! Not to mention you can smoke, pull the pot off and then sear, either on the grate or go caveman style right on the coals!
Course all that said I'd like to see some smoke and grub off your big rig!
