Going to try some spare ribs on Saturday morning! This will be my third smoke ever. I have done my research on here and will be doing 3-2-1 with some intermittent spritzing and checking with the bend test. Any further sage advice for a complete newbie?

Just keep in mind that 321 timings are only a guide.  Actual times will depend on size of the rack of ribs, chamber/grate temp of your smoker, and how you want the ribs to turn out (fall off the bone or a little bit of tug).

Thanks! If all looks good I will try to get some pictures for here.... Trimming them will be the first challenge!

Just the basics on the ribs... Garlic, onion, cayenne, chili powder, cumin, paprika, salt and pepper

Chicken had salt, pepper, parsley, garlic, onion and paprika I think... Also added some pasta salad spice that worked out awesome! I didn't get a picture of it and we ate the rest this afternoon!

Smoking a top round for pit beef inspired sandwiches this weekend... Hoping for the best!
