Hello everyone! Newbie from Kamloops, BC,  I've been haunting these forums, what a great resource!  I got a garage sale Little Chief a couple weeks ago and I'm discovering I like smoking, and this may not be the best unit to go about doing so :(  But..it did get me started, and as always, that leads down a rabbit hole, so Little Chief too hot for cheese, but not hot enough to cook, so next thing I know I have a AMNPS, two types of pellets to be found in Kamloops, Louisiana Grills and Traeger, I got Louisiana Grills mix.

Now it's out there in the Little Chief smokin away like a little champ - I like it!!!  I currently have a couple of test chops, half a head of cauliflower buttered up with homemade mayo, soon to come inside, grate some cheese on it and into the oven, also have some small cheddar blocks.

My test run was some cheese, got too hot, but I keep sneaking bits as it's mellowing in the fridge - wow, is it ever good!  A beef roast just to get smokey around the edges, wow!  and gravy to die for! These weren't even successes, and they are still good!  

I wanted to say a hello, and a big thanks to all of you folks sharing info, wish I had been here before I got the Little Chief, but then I didn't start the learning until I did, so a catch 22.  My head is spinning with info on cures and rubs, temps and times, and the pics - where is a little head exploding emoticon when ya need one???   I will try the AMNPS in the BBQ, hoping I can get airflow and temps to work together a bit better. 

So much for the yardwork I had planned to do :)
