Hello all and Happy Easter to everyone! hope you have a blessed Sunday. Beautiful weather here in TN. after seeing Jeff's newsletter this past Thursday it put some fire in me to finally give it a try. unwrapped it, cleaned it up good and went a different route than Jeff although am still using a rub and the Maple injection he shared. I took some Pineapple preserves and just smothered it in the crevices of the ham and rubbed it down real good with that and then applied my rub. thought about the pineapple preserves burning while smoking it but plan on using the maple recipe as a glaze as well and keep the temp down low as to not do that we'll see but anyways it is resting in the fridge now since about 5 Saturday afternoon and looking forward to it and just wanted to share some pics. will post some more tomorrow when it is going and finished.
