First Salmon Smoke on my MGS30 (with pics)

Well as much sucess as I've had with ribs on my MGS30 since christmas this winter, it was time for a good friday fish smoke.

Brined in 1 cup salt, 2 cups brown sugar for 90 min.

2 hours under the fan for the pelicle to form... now into the smoker.

The only thing I'm not real happy about, is that I can only get the MGS30 down to ~175deg.   That is door cracked open, flame on low, with a cast iron wood chip pan, and water pan above it.

Going to need a finer needle/seat adjustment mod to get it down any further.

Smoking in Apple wood chips, plan on putting some maple syrup glaze on here after about the 1st hour.   Cant wait!
