New MES rig with Home Depot small metal rack as stand

 

Here she is on the porch lifted on a Home Depot metal rack.

 

St. Louis Style ribs with Jeff's rub

 

Used Jeff's Rub.  Mighty nice.

 

 

Wild temperature variation

 

Temp in MES all over the place.  It did settle down, but I went with the Redi Check numbers after the heat settled down a bit too (230).

 

Ribs in with mix of Apple wood and Hickory (ran out of the apple and had to punt - we'll see)

 

The St. Louis Style ribs go in.  Didn't have enough Apple wood so I did a 50/50 mix of Apple wood and Hickory.  Smelled great.

 

Ribs out after 3 hrs.

 

Out in 3 hrs.  Lookin' good.

 

In foil with 50/50 mix and spritz of Apple Cider and Apple Cider Vinegar

 

Wrapped in HD foil with a bath of 50/50 Apple Cider and Apple Cider vinegar.  Hit with a spritz too.

 

Wrapped in foil with liquid for 2 more hours.

 

In for another 2 hrs. wrapped in foil.

 

Unwrapped and another spritz of Apple Cider mix. Back in for 1.5 hrs with smoke.

 

Out letting it rest while I have a sip.  Unwrapped and put back in with smoke for another 1.25 hrs.

 

Out and looking good. 

 

Out and lookin' VERY good.  Fall off the bone tender. With Jeff's sauce, the neighbors went crazy it was so good.  When you live so close to each other at the beach, sharing is the right thing to do - it also keeps the complaints down to ZERO.

 

 

Tasted real good too. Fed them to our neighbors - always a good thing to do when you smoke and you live so close together. Got the best reviews of my BBQing life. Thanks to all here.
