Here she is on the porch lifted on a Home Depot metal rack.


Used Jeff's Rub.  Mighty nice.


Temp in MES all over the place.  It did settle down, but I went with the Redi Check numbers after the heat settled down a bit too (230).


The St. Louis Style ribs go in.  Didn't have enough Apple wood so I did a 50/50 mix of Apple wood and Hickory.  Smelled great.


Out in 3 hrs.  Lookin' good.


Wrapped in HD foil with a bath of 50/50 Apple Cider and Apple Cider vinegar.  Hit with a spritz too.


In for another 2 hrs. wrapped in foil.


Out letting it rest while I have a sip.  Unwrapped and put back in with smoke for another 1.25 hrs.


Out and lookin' VERY good.  Fall off the bone tender. With Jeff's sauce, the neighbors went crazy it was so good.  When you live so close to each other at the beach, sharing is the right thing to do - it also keeps the complaints down to ZERO.
