Hey Case,

Wow, sorry I missed this when it came out a few days ago!  That is a great-looking spread of food.  Absolutely cannot go wrong with a smoked tri-tip, just a great crowd-pleasing cut.  Love the stuff!  Did you post your potato salad recipe somewhere?  I really like the look of that.

Just noticed that you've switched your cheese smoking to using a mailbox mod.  Did you notice a smoother smoke flavor when you put some distance between your AMNPS and the smoke chamber?

Love your pictures, you must have had some happy guests.  Have a great day!

Thanks Clarissa! Haven't sampled the cheese yet, but I'm sure it will taste great. I'll follow up in a few weeks. The main thing with the mailbox mod for the mini is it keeps the smoker cooler.

Tater salad, here ya go. All credit to my mom it's her base tater salad recipe. I used russets this time but like Yukon golds, red or multicolor fingerlings too.

Okay tater salad.

Equal taters to egg ratio

For this batch I used 6 taters, six hard boiled eggs.

I like to leave the tater skin on. Cube taters into 1/2"-3/4" cubes. Boil in seasoned water (salt pepper garlic) until tender, but still a bit firm. Drain taters and dump into ice water to stop cooking, allow to cool.

Best method for eggs. Place eggs in pot with cold water. Bring to boil, continue to boil for 5 minutes. Remove from heat, cover and allow to stand for 25 minutes. After 25 minutes remove eggs into ice bath to stop cooking. Peel immediately.

If you want smoked eggs in your salad cold smoke the eggs for 2-3 hours using a sweet wood.

Finely chop the eggs. Reserve one egg to slice as garnish.

Mix chopped eggs, and taters

Quarter and slice 6 radishes. Quarter and slice 6-8 small kosher dills. Add to potato and egg mixture.

Salt, pepper, celery seed, chipotle powder, garlic powder. Too taste.

4-6 tablespoons Guldens spicy brown mustard.

1-2 tablespoons best foods mayo (Hellmans for you East coasters)

Add mustard first then small amounts of mayo until you get your desired creaminess.

Chopped chives were used from the garden this time. Green onions are good too.

Some variations can be used, wasabi mayo, fresh dill, chopped jalapenos etc.

Let set four several hours in fridge. Garnish with chopped chives, sliced egg and radish.

A BIG thanks for your recipe, Case!  I'm planning to make potato salad and cole slaw to go along with homemade brats and pub bangers this weekend.  I'm going to give your recipe a try!

Thanks very much,

Clarissa

My good friends that came over brought me a be-lated birthday gift, we drank most if it, okay well all if the liquid. But they also brought me some metal!

If never buy it for myself but I will give it a try. Came with the corer, which I'd never buy, but I'll give it a whirl! Pretty wicked looking tool!

Case I apologize, but I guess you are going to have to take my hand and lead me......What is it? My only guess is maybe for pizza? And I assume the other is what you call a corer. I understand what a corer is, like for fruits. Will all the serration all over that sucker, what are you coring?

I don't have a mini, and don't get out and see all the new fangled inventions.

I am totally lost.

I thought they only sold those in the "naughty stores" or online via special order? Smiles. Your mates are quite a bunch, yes?

OK, OK, I plead neophyte and simpleton when it comes to my cooking, (or more accurately put, my mere "arranging" somewhat creatively atop a plate), and so do kindly educate this humble kitchen dweller in New Hampshire too, (I've been living in a snow covered cave you see, and don't get out much - not even to gadget stores apparently), as to what that is???

Again, your meal looked terrific! Cheers! - Leah

Thank ya guys, I appreciate the enlightenment!  I can't eat jalapenos so hope you can understand my not recognizing it. Besides the Jalapeno holders I have seen are like wire test tube holders. But anyway, Thanks I just have an inquiring mind.

And to think that I thought it came from some kind of "naughty store" even...Ahh well. Smiles. What a fabulous gift!

Enjoy!

And may I ask what the libation was they brought you as well?

What a fun gathering it all sounds like!

Cheers! - Leah
