Being Sunday and I have always want to try to smoke meatloaf after seeing it on here I thought why not!
Put it on the smoker at 250 and now the waiting....
I could have finished it in the smoker if the rain wasn't coming down so hard. I have a cheap offset that I use when I don't have enough to fire up the big beast. I would have liked to have gotten the temp up to 300 after 2 hours of smoking to crisp it up and finish it. I am going to try again and this time grind up the bacon and mix it in to mixture instead of layering it.
Either way it was pretty good.
